If you can write the music out or poke it out on the piano from memory, then you truly have memorized the piece, and are not depending on "muscle memory." You might also sing the piece while saying the note names. Doing these activities are good exercises for memorizing.
Another helpful process is to analyze the piece in terms of chords and structure, if you are able. Understanding the piece helps jog the memory.
